Meaning of the word
Cider [sídr, sajdr] is an apple wine produced by controlled fermentation of apple must. The drink is popular mainly in Western Europe (United Kingdom, Ireland, France, Spain). Its origin and distribution have long been disputed. The origin of cider production is probably associated with the area of today’s Basque Country. The alcohol content of the drink ranges from 1.2% to 8.5%.
History of ciders
The drink was known since ancient times. The first medieval reports of cider production in Europe date back to the time of Charlemagne. The first scientific work on cider production is the “Traité Du vin et du sidre” written by Master Julien Le Paulmier, personal physician to Charles IX, in 1588.


Cider in the Czech Republic
At the end of the 19th and beginning of the 20th century, a partially or fully fermented drink popularly called “jablečný burčák” was made from apple must in southern and southeastern Moravia. This was at a time when vineyards in Moravia were destroyed by the vine borer. Fermentation takes place in glass or in original wine barrels, which have been preserved to this day in many places. For a delicious taste, it is important not to prevent the development of lactic acid bacteria at the beginning of fermentation, which will die off on their own when the alcohol content in the must increases, which is why the musts do not sour. The most suitable apple varieties are Panenské and Jadernička moravská. A drink made from a mixture of musts of winter varieties of pears and virgin apples or from pears alone is also excellent. Fermentation creates a delicately sparkling drink with a delicious taste with a balanced ratio of sugars, acids and alcohol with a mild bitterness. The higher acid content of apple cider in cold years can be easily controlled by slightly diluting the cider with water and by using a higher proportion of pear cider. In the farms of southeastern Moravia, the usual production of this product was around 3 hl per year.
The first to be produced in the Czech Republic was Mad Apple – an original Czech cider, originally from Znojmo, but production ceased in May 2013. Currently, production continues in Louny.
